Holidays are coming

So today I started with Christmas food preparations. It’s Swedish Christmas red cabbage. It’s perfect to get done early as you can freeze it in. I usually freeze it in portion packs. 

And it hasn’t been made for 2 years now cause I cannot find the red cabbage close to Christmas, I do not know why! 🤔

It’s excellent with ham, meatballs, sausages and smoked salmon. Yes we have all of that and more on our swedish Christmas food buffet table. And I will share with you here bits that I do for my family. 

Swedish Christmas Red Cabbage 1 kg red cabbage 1-2 yellow onions 2 tablespoons butter 2-3 sourish apples 1-1/2 teaspoon salt 5-10 hole cloves 5-10 spice peppercorn 2 teaspoons sugar 1-2 tablespoons vinegar or lemon juice 1-2 tablespoon black currant juice 1 teaspoon vegetable stock Peel and roughly chop the onion, cabbage and apples. Dry off the onions then add the cabbage and apples. Boil under a lid for 30-40 min with the spices. Add the liquid and taste wit sugar and salt. I usually add sugar as it boils aswell as for the tasting. It can need more than the 2 teaspoons of sugar. I would normally use black currant juice but this year I have none home so it’s lemon juice. And a tiny bit of black pepper. Xx
