Saturday pancakes

My girls wanted pancakes for breakfast today and as it’s Saturday why no? They only eat them with chocolate spread so that isn’t the healthiest. To combat this and to bring some fiber aswell I always add 1/3 of rye flour to the mixture. More and they will not taste nice. Rye flour has very little gluten in it so becomes very dense on its own. Yes you could add baking soda or bread soda but I prefer to leave them out.
In Sweden they are very found of their rye flour but it is always mixed in with other flours. This to get the gluten for consistency. Rye flour does bring a wonderful flavor to what you are making. If you plan to use it for cookies or fine cakes make sure you sift the flour first.
Cece pancakes
2 eggs
Milk or water
2 parts plain flour
1 part rye flour
Dash of salt
Optional: sprinkles, nuts, dried berries or berries
This is quite a dense mixture so the pancakes are more Americans style than the French crepes.
